The gastronomy of Extremadura has receipts rich person and varied, based on the use of natural products of the first quality and a particular savour. The caldereta of sheep, is a dish suitable for the northern zone of Extremadura (Plasencia, Hurdes, Valley of Jerte...), while the lamb, occupies a place privileged in the Grounds of the South (province of Badajoz), traditional zone of transhumance where the best ewes merino are raised. This meat is prepared multiple manners, is roast, with the caldereta, fried, and with his poorer parts one works out celebrates it "Chanfaina".
While speaking about ovine cattle, it would be unjust to forget excellent cheeses that its milk provides us. The goat's milk cheese is of a great tradition in Navalmoral of Mata, in Vera and especially recognized are those of the Mountain of Ibores, protected by a Denomination from Quality. As for cheeses of ewe, one can find in many zones of Badajoz, but it is in the sector of the Serenade, where one works out those of better quality, by underlining "Wafer of the Serenade", which with "Wafer To marry" (Cáceres), are regarded as some cheeses a greater prestige and a quality on a world level.
In all the parts of Extremadura the dishes of hunting are excellent, so much of birds, partridge, doves, like wild boar, or rabbits and hares.
We should not forget that Extremadura is one of the Communities with more soft coasts, this why it does not miss excellent fish prescriptions. Its best dishes are elaborate with fish of river, like trout’s, the trenches, carps etc that or fried, in, or marinades, will make the delights of the visitor.
Our wide pastures give house to the king of the gastronomy of Extremadura, the pig. Marquetries and the derivatives of the traditional "massacre" of the pig Iberian group a varied range of products like sausages, spines, chorizos, morcones, and rolls and appreciated the hams of "pata negra", those of higher quality. The hams of the sector Southern Mountain (Badajoz), obtained the denomination of Pasture of Extremadura which certifies his excellent quality to us. Other zones of Extremadura where we can find good ham it is Montánchez, Hervás, Arroyo of Luz, Piornal, etc.
All the dishes of the vast kitchen of Extremadura have to be accompanied with a good wine by the ground, well by will pitarras of the zone, Tierra de Barros, of Cañamero, etc, wines, already, very appreciated in fairs and contests. It will be able to also taste excellent fruit liquors carried out in an artesian way by the Grouping of Co-operatives of the Valley of Jerte: like Kirsch, liquors of plum, bramble blackberry, raspberry, etc.
